One of our favourite recipes are vegan oatmeal and banana cookies, great for a snack or breakfast on the way to work, and ideal for family preparation.
You only need a couple of ingredients to make these simple and delicious cookies. Oatmeal is a very complete cereal at a nutritional level, because it’s high in protein, contains healthy fats, carbohydrates and vitamins. We also love banana because it has great energy power and is a fantastic natural sweetener.
- 2 ripe bananas
- 1 cup of oat flakes
You can add more ingredients, such as ounces of chocolate, nut butters, dates, cinnamon, or a pinch of salt. At the end of this article you can find our favourite versions.
1. Peel the banana and mash it with the help of a fork.
2. Add the oat flakes and mix them with the banana. In this step, if you want, you can add more ingredients to taste.
3. Work into the mixture until the ingredients are well mixed together.
4. With your hands, make balls and crush them on baking paper, to give them a cookie shape.
5. Preheat the oven to 180ºC, bake the cookies for 10-12 minutes.
6. Remove from oven and let cool on wire rack before devouring.
A lot of variations of these oatmeal and banana cookies can be made adding a little imagination. Here you have our favourite versions of the oatmeal and banana cookies, created in the Body Genius kitchen:
OAT, BANANA AND RAISIN COOKIES
Additional ingredients:
- 2 scoops of Vanilla Lean Protein
- 1 handful of raisins
- 1 tsp. cinnamon
- 1/4 tsp. of salt
OAT, BANANA AND PEANUT BUTTER COOKIES
Additional ingredients:
- 2 scoops of your Preferred Lean Protein
- 2 tsp. of Peanut Butter
- 1/2 tsp. of cinnamon
OAT, BANANA AND HAZELNUT COOKIES
Additional ingredients:
- 50g of hazelnut butter
- 1 tsp. yeast
- 1 tsp. cinnamon
- 1 tsp. sweetener
- 1 handful of chopped hazelnuts
Additional steps:
Add the hazelnuts when you have already shaped your cookies.
OAT, BANANA, ALMOND AND CHIA COOKIES
Additional ingredients:
- 1 cup of almond butter
- 1/4 cup chia
- 1/4 cup of water
- 1/4 cup cocoa
- 1 tsp. of sweetener
- 1 tsp. of yeast
Additional steps:
Soak the chia in water for about 10 minutes so that the seeds hydrate and absorb the liquid. Once the seeds are moistened, you just have to mix them together with the rest of the ingredients and follow the rest of the steps.
OAT, BANANA AND CASHEW COOKIES
Additional ingredients:
- 50g of our cashew butter
- 2 tbsp. cocoa powder
- 1 tsp. yeast
Additional steps:
Don't forget to give them one last touch with more cashew butter on top before enjoying them!
